
#002 ERIC'S SMOKED MACKEREL
Start by marinating up to 20 mackerel fillets as follows:
1/2 bottle of zesty italian salad dressing
2 tsp dijoun mustard
5-6 shakes teriyaki sauce
4 shakes soy sauce
4 shakes Worstershire sauce (option for tanginess)
1/4 cup orange juice (option for less tanginess)
1/4 cup apple juice
Marinate from 2 to 12 hours (longer for taste)
Saturate your favorite wood chips in water for 20 minutes. This keeps the smoker from getting too hot. Set your smoker or grill to low heat. Place the marinated fillets skin-side down on the grill and check on them after one hour to see if they are cooked through. If you are using an outdoor grill simply sprinkle the wood chips over the coals and check your fillets a little sooner.
