MACKEREL IN
WINE SAUCE

3 lb of boned mackerel fillets

1/4 stick butter

1/2 cup white wine

1 sliced lime

1 chopped red pepper

1 chopped small onion

1/4 cup bread crumbs

 

Heat oven to 350 degrees. Saute butter, white wine, chopped red pepper and chopped onion in a baking dish for 10 minutes. Remove peppers and onions with a slotted spoon and set aside. Place mackerel fillets skin side down into sauce. Sprinkle on bread crumbs, place one or two slices of lime on each fillet and then top with sauteed pepper and onion. Cook at 350 for 12 minutes. Test with fork, there should be no resistance - but do not over cook. Serves Six.
